Delightful, Healthy Thai Noodle Salad
Thai Peanut Noodle Salad
INGREDIENTS:
1/2 cup peanut butter
1/4 cup River Wave Foods Thai Vinaigrette
1/3 cup hot water
1-2 T oil (peanut with a dash of sesame oil is great)
8 oz cooked rice noodles (other noodles work well too)
1 cup cleaned dried bean spouts
½ cup julienne carrots
1/4 cup thinly slice green onions
1 cup shredded red cabbage
Fresh cilantro, wedges of lime and crushed roasted unsalted peanuts
TO DO:
Whisk together peanut butter, hot water and My Thai Vinaigrette
Heat oil in a wok or large pot medium/high heat
Add noodles to oil and quickly stir fry, turn heat down
Add sprouts, carrots, onions and cabbage and toss with noodles
Turn heat off and add peanut sauce, toss thoroughly
Garnish with cilantro, lime and peanuts
